Louis in his backstory would rather slit his own throat than be eaten alive.
Gouhin is a walking moment of awesome, capturing instinct-crazed carnivores to rehabilitate them.
Meteor Festival Arc
Haru standing up to the Lion boss, composing herself in the face of death and declaring that she won't be a pleasant "meal" for him. Her composure quickly disappears when the Lion pounces on her, having decided to stop toying with her and just eat her now (One piece at a time). But Haru's Face Death with Dignity moment buys her enough time for Legoshi to arrive and rescue her.
On a related note, Legoshi unleashing a No-Holds-Barred Beatdown on the lion gang, with the help of Gouhin.
While it crosses a few lines, Louis becoming head of the lion mafia is riddled with this, particularly as he's a betterand more effective boss than most, in part because he's an herbivore and can make inroads with herbivore "protection" clients.
Pina preventing Tem's killer and Legoshi from coming to blows and blackmailing him. It would've worked well for a time too, if Riz didn't undergo some Sanity Slippage.
Louis offering his Leg for Legoshi's survival, pretty much the ultimate sign of trust between the two of them.
Life as a Dropout Arc
Legoshi completely ignoring the bloodbone drug and beating the stuffing out of the dealers.
Revenge of the Love Failure Arc
Melon’s father, brought to the floor, threatened by a righteously murderous Gosha for being a capital-D deadbeat asshole with no semblance of decency or remorse is probably one of the greatest scenes in the entire manga, if not the greatest. Not Legoshi rescuing Haru, not Louis offering his leg to Legoshi, nope: an angry grandfather who has run out of patience and cannot forgive this man for destroying their family and who is prepared to administer the most brutal Disproportionate Retribution seen in the series may be the author’s most cathartic scene!
