I'm partial to Rei Ayanami of Neon Genesis Evangelion, personally, since she's something of a Trope Maker. But any of her expies should work as well - Kanade Tachibana is a good one.

It is impossible to say anything about Chell, since she is always silent and in general her character and biography are almost unsolved.

Why is there a gender inversion of this trope is the Emotionless Boy, if in 99% of cases he will retrain into The Stoic?
