(Basically, the nuclear reactors allow kaiju to be as big as they are. Much of their biological processes are offloaded onto their parasites including things like eating and breathing.

Everything else is not edible to humans, due to how differently evolution went on the Kaiju Earth. And while the locals would really like to eat humans, that's just because they want to eat everything that seems vaguely edible and they're not smart enough to realize when they shouldn't. Preventing yourself from being eaten is as much for their sake as yours.

It's a much higher-tech version than others in fiction as it goes into the various adaptations to things like plumbing and infrastructure needed to get a base of 150 people functional.
