The first season started sloppy at first. The first episode appears to be a simple animation of Frisk fighting back against Chara's attempt to kill Sans. Then the next episode comes and we began to understand the consequences of preventing a genocide run at a moment that shouldn't be possible. Chara soon comes back, not because they want to see what happens when they kill, but because they wished to restore the timeline's glitches. (Hence the name of this series.) By the time this season ends, we as an audience may begin to believe that Frisk found a way to save the timeline without everyone getting destroyed.
But then the next season comes around, and we are proven wrong. Some of the fandom's most adored characters get killed of, and Frisk couldn't fix it. This highlights that AnyoneCanDie and that Frisk was NotSoInvincibleAfterAll. HeroicSacrifice ensue, and now a HumanoidAbomination is threatening to take over the world, and destroy it entirely if they have to.
To me, this series can be seen as a Deconstruction of the player's supposed unlimited power, which is why much of the Undertale fandom loves it so much.
