In the Values Dissonance section for the TV series, when Cousin Itt complains that it is not fair that he cannot be a stewardess and Morticia disagrees, this seems to be less an issue of values dissonance than of exact wording (Cousin Itt is understood to be male; no one ever said he couldn't be a steward/flight attendant) and of comically missing the point (even in universe, it is likely that it would not be possible or advisable for Cousin Itt to be a flight attendant, but the reasons why would have nothing to do with Itt's gender—whatever it is).

Itt doesn't have a gender. it's just a case of a different era having different values and thus, a different idea of what is funny and appropriate compared to today.

Itt is always referred to as "he" and not as "it" as a pronoun, despite his name being Itt. We don't know how his biology works (though in the films he marries a human woman who has his child) but other characters do seem to view him as male and (other than wanting to be a "stewardess" in this one episode) he never gives any sign of disagreeing with this view. In that sense it seems he does have a gender? Gender isn't the same as biological sex... the latter I suppose is rather ambiguous (outside of aforementioned point about the films) for an unknown kind of creature with apparently three shoulders under all that hair and who knows what other strange features.
