There's a couple of situations that I wanted to add, but I'm not sure if they fit:

Bob was attracted to both men and women, but the story starts after he's already been dating/married to Alice for awhile. Bob is monogamous, so he's not interested in anyone except Alice. The only reason we know Bob is bisexual is because we see it in flashback, or we meet one of his ex-boyfriends/crushes at some point.
Bob is bisexual, but because he's the token male in a cast of women, his attraction to men never really comes into play.
