In the ASOIAF example, could someone explain how a horse's moodiness is justified by it being trained for battle? Do the horses in question bite enemies, or do the throw their own riders? Because I don't think the latter is part of the training of a war horse - quite the reverse, that would be very, very impractical in a war horse.
