As for Bullet Heaven 2: The easiest "normal" mode doesn't really mock the player (as far as I can see), but it's fairly obvious that it makes the game a casual shooter rather than a Bullet Hell game.

I found a quote from Streets of Rage 3 that taunts the player trying to beat the game on Easy (U.S. Version only), wondering if it was better than the current one on the page.
"All that effort and you only defeated my stand-in. You have not discovered the location of my hostage and while I have him, Axel is thought to be a criminal. You play this game like a beginner. You'll have to do better than this to defeat Mr. X." —Robot X after his defeat on Easy difficulty
