So does the "bundle of dynamite sticks" version fall under this trope? (Even so, in my opinion the Team Fortress Classic demoman MIRV is not cartoonish enough to fall under this trope anyway.)

I'd say no; the term refers to the black ball style bomb.

Bundles of Dynamite sticks would probably fit under "Incredibly Obvious Bomb"; or if you feel it's appropriate, under it's own trope (called "Bundle of Dynamite Sticks", natch).

This appears to be a non-example — not a cartoon bomb as described.

In Bio Shock, the encounter with Sander Cohen's first protégé is him playing a grand piano — which has a belt of red sticks marked "TNT" on them. Then he stops playing and tries to unchain himself from the piano... *
^{You can also shoot that guy before he stops playing — and Cohen will say "Was he so obviously lame?" or "That was over quicker than I'd hoped...."}

I'd rather have Zeeky H. Bomb as page picture. But that's just me...
