In one of the commenataries of the movie, either the director or producer mentions that they provided a reason as to why Dracula can't see his reflection in the mirror around the time Helsing and the others discover the door.
Now, this is where I get confused. I listened to that commentary and all the special features other than the "Explore Dracula's Castle" feature and I still don't remember hearing an explanation as to why Dracula can't see his reflection.
The only thing I can figure is the viewer is supposed to just know why after seeing that he uses mirrors for doors...but Helsing and the other two characters use the mirror door just fine and none of them were vampires.
