I think that that was a pretty reasonable, if rather strict, reaction to Jojo's belligerent behaviour towards her, and him apologising, explaining himself, thanking Jojo for taking care of his mother and reminiscing on his time with her shows he's ultimately decent. Then again, Rosie would probably portray her husband in a more positive light, and then again, she was less actually attempting to impersonate her husband and more attempting to discipline and comfort Jojo.
I think it's pretty clear that Rosie simply lost her temper and then, after calming down, kept up the act as a way to smooth things over.
