Eric had another wife.
The reason for the contradiction between what we see of Sara's death here and what was implied in the previous film is because Eric had another wife between running away from Freya and getting involved in Snow White's campaign.
Just because Sara was his true love doesn't meant that he wouldn't have at least tried to move on to prove Freya's words wrong, considering that he had every reason to believe Sara dead and therefore would have had every right to at least try and move on.
Naturally, it can be left open to interpretation how successful he was with that plan.
