In "Dark Knight", Nick flies up behind an Uzi-wielding crackhead who is about to murder a young woman before he rips him through a window then tackles him from above with his flight powers.
Nick manages to defeat La Croix in hand-to-hand combat twice. The first time impaling him on a meat hook and the second time by stabbing him with a giant flaming beam. He's on animal blood both times as well.
In "False Witness" Nick won't testify against his students as a history professor and is destroyed by McCarthy. He later also recants his testimony in court after he refuses to lie to frame a pornographer he believes to be guilty.
In "Cherry Blossoms", Quon is an old man who effortlessly defeats a number of thugs with his acupuncture needle. Which is fine but less impressive when he manages to take down Nick himself.
In "Dead Issue", Schanke of all people, gets one as he manages to take down the murderous stalker who has been hunting him without Nick's help.
In "Feeding the Beast", Nick proceeds to eat some french fries. Which sounds like a minor accomplishment but is actually a sign of Nick finally overcoming his blood addiction.
Season Two
In "A Fate Worse Than Death", we finally get Janette's backstory and find out how much she had to survive as a peasant girl, prostitute, and vampire.
Season Three
In "Sons of Belial", Nick and La Croix both face down a literal demon. They are forced to deal with it using faith since that is immune to traditional vampire powers.
In "Ashes to Ashes", La Croix and Nick manage to defeat Divia despite the fact that she is millennia old and more powerful than them both.
