The movie only says that Linda made the hat, not knitted it. Linda has made outfits before (such as the pickle costumes) with no knitting involved. Unless it's eventually stated the hat was specifically knit, this isn't a retcon. As for the other examples, the example from "Ear-sy Rider" could be explained due to time (it's faster to buy a new hat than make one, and Louise clearly wasn't going to wait); as for the "Mother Daughter Laser Razor" example, Linda fearing for her bonds with her children (no matter how irrational the fear) has always been a consistent part of her character—granted, Louise favored Bob over her, but she didn't hate Linda and only took issue with her being a My Beloved Smother (which the revelation of Linda making the bunny ears wouldn't outright contradict).
