You must siege the fortresses and eventually walk into the castle and kick the ass of the Overlord in charge. The Overlords aren't stupid enough to go without bodyguards, but you can use that to your advantage. You can take a dominated captain, send them on a quest to become a bodyguard for the Overlord, and when the time comes, they'll betray them and fight on your side instead.
