The dialogue choices do allow you to be suspicious of Merlin's oddly convenient appearance in the cavern and refuse to give up the Spark (alongside responses where you give it to him without hesitation), but refusing to hand over the Spark to "Merlin" will eventually put you into a situation where you can only either capitulate and hand over the Spark or continue to refuse, whereupon "Merlin" just flat-out takes it from you by force. Either way, "Merlin" turns out to be Jafar in disguise and escapes with the Spark, setting the next chapter of the story into motion.
