The problem is they didn't receive the skills to go along with the memories. Exactly how extensive their memory alterations were is not explored.

Rarity's special talent is 100% her fashion sense. Her cutie mark appeared when her fashion sense was congratulated. Gems are related to how she got it, yes, but is Fluttershy's special talent taking care of only butterflies? No, it's a metaphorical representation of all animals, like how Rarity's gems are a representation of all things fabulous.
