Evelyn's not exactly a huge fan of Mozart: his early work was alright, but throughout the 20th century, all he's focused on is rap and bad film scores. She doesn't actually believe that he's a real person (after all, no one can live that long), and supposes that Mozart has to be a kind of brand name.
