Should all the pages here be Spoilers Off because this is a documentary series about real air disasters, and therefore, the fates of everyone onboard are a Foregone Conclusion?

Nah, the spoiler tags should stay. Some of the disasters' outcomes aren't well-known. I recall at least one person being genuinely shocked by "Blow Out".
