My only concern is the apparent need to serialize the East Blue adventures. The episodic structure let you get to know the Straw Hats pretty well, and still flowed well enough that the switch to serialized content wasnt jarring. I'm mostly just worried that they're going to be adding more noise than substance.

The building of what looks to be a rather elaborate set, which says the production has actually sunk money into making the show a reality. Contrast that with say, the (possibly canceled) live-action Avatar, which hasn't built a single set while the original creators throw shade at the production.
Now all we need is a cast to actually board the thing.

A cast list was present (and everyone listed was different from the initial rumors), but was taken down from online postings, and at this point, I'm not trusting any cast list that isn't fresh from Maeda or Netflix's own Twitter.

Grain of salt indeed with the casting call for Nami and Sanji which is listed as “open to any ethnicity”. Seriously, they said they would follow the ethnicity to a T based on how Oda indicated yet decided whatever for the two characters who are intended as Caucasin?
Now I’m afraid some tools on Youtube will catch wind of this news and use it as ammunition for clickbait money.
Other than that, the descriptions sounds about right.
This one also doesn't make sense. Oda claims Zoro is Japanese. Ludi Lin (and Robin Shou for that matter) are Chinese.

Well, Mackenyu played Enishi in the Rurouni Kenshin live action movies. He also played Cadet Ryoichi in Pacific Rim: Uprising. He's very famous in Japan, having played Eiji Tomari in Kamen Rider Drive: Surprise Future, Arata Wataya in Chihayafuru live action and most recently, Aoi Nishino in the live action adaptation of the manga Brave: Gunjō Senki. He will also be playing Seiya in the live action adaptation of Saint Seiya. He's pretty good, IMO. Not to mention being a martial artist, he can do many of his stunts. He's also the son of the legendary Sonny Chiba.
Obviously, you won't know him if you don't follow the Japanese film and tv world. Been following Manckenyu ever since he played Eiji in Kamen Rider Drive.

The cast and crew has been in Cape Town for a while and there's been stuff popping up more on social media now that pre-production's officially begun.
One of the more notable pics to come out lately has been this tweet of Mackenyu training three-swords style.
God that must be awkward to do in real life.
Eh. Writing a manga is different from writing a television show. This could easily be bad if Oda oversteps things. Though as someone who hasn't read or watched OP I wouldn't know how bad an adaptation it is either way. Like, it's possible to be a good show but a poor adaptation but I doubt it's possible to be a good adaptation and a poor show.
