Not every single one (it's why the Casino episode is by far my favorite episode of the series, for instance - it's just straight up "let's use an adventure to illustrate why the kids love Donald so much" without obstructions and it has so much heart as a result), but they definitely spent enough of it that it was noticeable, and enough that a case could be made that they did it too much.
At times, it did come off as them focusing so hard on the question of "why would anyone go on an adventure anyway? What do they get out of it?" that they occasionally forgot that adventures are supposed to be fun, or what the characters in those adventures can bring to the story beyond being self-referential.
And that hyperfocus arguably is at the root of a lot of the show's known problems. Dewey was a divisive character in the first season, and that could be attributed to the fact that they were so focused on examining and deconstructing his character type that the show rarely had room to include other characters or introduce plots that didn't have anything to do with him. Or the overall problem that - even given the attempt at seasonal focus for each of them - the triplets often feel like they don't have much to do in the story, since for until almost the end of the series their primary purpose was to be the vehicle through which the show delivers its self referential commentary and not much else.

"The difference between reality and fiction is that fiction has to make sense." - Tom Clancy, paraphrasing Mark Twain....You know, I kept seeing people saying that the show shows this so-called disinterest in the original's adventurous shenanigans... but like I personally never really picked up on that... or at the very least, its disinterest, didn't exactly stop this incarnation of Duck Tales itself from... well... still doing quite frankly exciting adventures. There are some banger adventures in this show, wacky hijinx, a genuinely enthralling feeling of mystery at every corner... hell, one of the few times I picked up on any anti-adventure sentiment being super overt... it was Louie, opting out of the Mount Neverest hike in that Season 1 episode... but like, come on, that joke was FANTASTIC.
But I did notice Duck Tales 2017 taking the time out of their day to call out the original Darkwing Duck show for not taking the time to explain that, hey, the Launchpad McQuack in that show, and the old Duck Tales show, was the one and the same. They even had Launchpad here explain how he would, in fact, balance both lives there.
Robin: Don't ever ask me to dock with you again. Serious...While I'm not really into Ducktales 2017 and only watched a few eps, I didn't really like how it tried to "swallow" Disney Afternoon as a whole.
There's precedent for that, though. What about the classic "Chaos God" comic from Disney Adventures?

Sure, it did poke a little fun at certain tropes, but the way it did it was in a good-hearted way and I always got the feeling that the remake was very appreciative of the original show.
I just didn't like the personality changes they made to beakley, webby, and doofus. I was ambivalent to most episodes except the grand finale which I hated.
I also disliked the art style which is frustrating because now whenever I Google gosalyn or darkwing it keeps showing the dt17 designs and their weird beak shape and pie eyes.
