Batman usually has a lighter shade of hair when he's played by a real actor. He also traditionally has blue eyes, but they were colored brown/black in Batman: The Animated Series. They were changed back to blue once it was retooled into The New Batman Adventures. George Clooney also had brown eyes and graying hair in Batman & Robin.
Vicki Vale is normally shown as a redhead in the comics, but was played by the very blond Kim Basinger in the original Batman (1989). She's also blonde in the Batman: Arkham Series and brunette in the Telltale series.
While Catwoman is traditionally depicted as having dark black hair, the extremely blonde Michelle Pfeiffer played her in Batman Returns. This appearance was originally used for Batman: The Animated Series since the series was intended to tie-in with Batman Returns. However, when the show switched networks and art styles, Catwoman returned to her black hair color and the change was even explained away in an issue of the tie-in comic Batman: Gotham Adventures as a result of a dye job because her original hair product had been derived from animal testing. Her hair is returned to black in The Batman, but her traditionally green eyes have been changed to blue.
Another canon explanation in the 'Contagion' series showed that as a criminal, Selina Kyle constantly cuts, dyes and restyles her hair to try and hide her identity.
Barbara was created for Batman (1966). She had short, dark brown hair but wore a red haired wig as Batgirl. The comics ignored this and made her wig into her actual hair.
Barbara's normally blue eyes are colored brown in The Batman.
It's changed again in Suicide Squad (2016)... sort of. She's still blonde—but like in Batman: Arkham City the tips of her pigtails are dyed, though the black was replaced with blue.
While averted in the series proper, in the original, unaired pilot of Birds of Prey (2002), she has black hair.
An odd example within one medium: The second Robin, Jason Todd. Pre-Crisis, he had red hair (kind of strawberry blond), permanently dyed black. Post-Crisis, he had naturally black hair. After coming back from the dead, he started out with black hair with a white streak, but now has dark red hair with a white streak, since the dye has apparently grown out. Now with the reboot, he's back to black again.
The traditionally red-haired Pamela Isley is portrayed as a blonde in Batman: Two Faces.
In Batman Begins the usually vibrant green-eyed Ra's al Ghul (possibly a side effect of the Lazarus Pit) is played by the blue-eyed Liam Neeson. The white streaks in his hair and goatee are accurate though.
Arnold Flass from Batman: Year One was blond, while in Batman Begins he's dark haired.
The Joker has permanently bleached white skin and green hair in the comics and previous film adaptation, thanks to falling into a vat of chemical. Heath Ledger's Joker in The Dark Knight has normal Caucasian colored-skin and dark hair and he just paints his skin white and dyes his hair green, which befits the more realistic universe.
The Gordon Family have different hair from the comics. Jim being an older man has had grey hair in the comics and most media for decades, in the Nolan films however he's gotten a Age Lift (being played by Gary Oldman in his late 40s) and has brown hair, although the New 52 comics would depict him as younger and brunette as well. Jim's wife Barbara and daughter (Batgirl in the comics) are both redheaded in the comics, while they're both brunette in The Dark Knight. Additionally James Gordon Jr is a redheaded in the comics but has blond hair in the film.
In a reverse example, Chase Meridian from Batman Forever had blond hair in the movie. When she became a Canon Immigrant in the comics years later, she was now depicted as a redhead.
Batman: Soul of the Dragon: In the comics, Lady Eve is black-haired while King Snake is blonde, but here they're blonde and redheaded, respectively.
Batman: The Animated Series saw Killer Croc's skin go from green to grey, though when it came back as The New Batman Adventures, it returned to the green.
Harley Quinn: Nora Fries has white hair, unlike in Batman TAS and the comics where Nora is blonde.
