Paul A: I'm not sure that merely dropping your first name and using your second given name counts as adopting a stage name. A lot of non-actors do that in real life anyway, just because they prefer their second name.
Rissa: Removed the Stephen Colbert example, as it's not a stage name. He never pronounces the T, even when out of character - he changed the pronunciation of his name altogether. (See this Rolling Stone interview.)
