Gundam series explained this in the very first series by Char Aznable, stop staying in front of your enemies' gun/cannon. This example is that you don't even have to dodge anything, as long as you keep moving randomly enough, so that it is impossible for the aimer to have enough reflex time to react and pull the trigger when you are actually in front of the gun. Since Mobile Suits can run automatic programs to do random action, the pilots do not need any skills to do it themselves.
I once watched a Sylvester Stallone movie where Rambo appeared to be moving so fast he was dodging bullets from an automatic rifle, which were falling harmlessly well behind him as he moved, although they were following his movement. It ocurred to me that in the right circumstances this is technically feasible: the gunman was not allowing for deflection, and firing in front of Stallone so that he'd run into the bullet stream. Rambo was not outrunning the bullets so much as outrunning the gunman's intelligence and ability to swivel the muzzle fast enough for any bullet to have a reasonable chance of hitting. A more intelligent rifleman might have worked this out...
