Kazuma◊ Kaneko is one of my favorites. I love the smooth quality of his work. I've also got a soft spot for Salvador◊ Dali◊, mostly because of the huge amount of secondary details in his work, and of course, the fact that it's a real mind trip. ^^
On a less famous note, Rebecca Dart is awesome. I particularly like her pencil sketches. And Lucy Knisley, too.
But somehow,◊Wayne Barlowe, who no longer has a website apparently, is one of my favourite artists. I'm also fond of Alex Pardee◊ and MichaelKomarck

I would be leaning more towards Akira Toryama and Masashi Kishimoto. When i draw, i take the simplicity used in Dr. Slump and Dragonball from Akira (With DBZs great fight scenes of course) and the Extreme detail used in Kishimotos backgrounds by his detailing background artist.

I'm gonna have to agree with the OP on Monkey Punch, although I prefer his later,◊ more refined◊, cartoony style◊, as opposed to the MAD Magazine-inspired stuff in the original post. Although both are great.
And on the other side of the Earth, I've really gotten into Steve Ditko's◊ film noir◊, quirky◊ style. (Ignore the dialogue in that second Ditko example, just focus on the art.)
