Short Version: No.
Long Version: All the current ones are indeed dead. We've generally had problems keeping the 7-14 player quota filled with enough active players to actually finish a war.
Silly Version: Every time we start one, Dark Sakura shows up and OM NOM's our players, thinking it is a real Grail War, with real delicious Servants and Masters to consume.

So... I've noticed that there are 5 or so threads for a holy grail war, and they all seem to be dead... are there any signups that are going?
