I kinda assume they cover normal stuff during all of the Boring Parts We Don't See. I.e. Xavier's school is an actual school with extra classes on superpowers. But writing sometimes does dumb things when that assumption can not apply too.
Yeah rule of perception is in play there. People assume that a school existing and the cast attending it means that they take the classes and therefore the writer could use it to omit that from the narrative, even though that has the effect of people thinking the school here is just set dressing. (and it very well could be)
Discworld is fun because despite having an earlier example of the Wizarding School, Unseen University is already a parody of the trope and avoids pretty much all of the clichΓ©s Red talks about in this video.
The school's main goal is to teach wizards not to use magic. All the characters of prominence we follow from UU are the faculty members; only one book (Moving Pictures) features a main character who is an UU student. And there is zero teaching involved in the university, because the faculty likes to avoid students as much as possible.
Rincewind was a student when he started out. He got moved up some vaugeness and an official professorhood eventually but his first few protaognisting books had him as a student.
Rincewind was already a former student when we were first introduced to him. Well, he was kicked out of UU before he could graduate properly, but still.

Edit: Having watched it now... Even though this was fun, as most detail diatribes are... A lot of it is Red repeating things she's already said earlier, multiple times. There is something charming about how they just hit record and go, just talking excitedly, gushing about whatever they're talking about... But this didn't need to be an hour and a half.

The sheer spectacle of this fight makes it pretty easy to see why Bull Demon King is Son Wukong's most famous adversary.
Man, Journey to the West really was the first anime, wasn't it? This was like an anime Movie. 'Hey, this guy was mentioned, he used to keep up with Sun Wukong, now what does that mean, and how many badass setpieces can we get out of it to pad our movie's runtime?'

Related note, did someone attempt writing a Xianxia novel centered on her? That seems like some prime story material right there!

Not really, not everything in Dragon Ball is based on Journey to the West. The thing about Journey to the West is that it has a lot of difference story arcs and not every viewers would remember them all, some take inspiration from this part while other take inspiration from the other parts. The iconic aspect of Iron Fan Princess is the Iron Fan. The iconic part of The Bull Demon King is that he is a giant Bull and was Son Wukong sworn-brother.
