Creating "Utility/Narrative" classes, I wanna call 'em "demi-classes" cause they're made incomplete on purpose. They're made to be gestalted with other classes, they're expressively barred from certain classes, mostly full-casters come to mind but it might be prudent to go through each class one by one and they only have Narrative / Utility abilities.
Classes like Ritualist, Commander, Noble, Diplomat, Survivor, Engineer, Chosen. Someone with a class lacking for skills or abilities outside of battle might have one of these tacked on.
It'd be easier than my idea of building everything up again from the ground up.
Isn't that kinda similar to archetypes or corruptions? Obviously not identical idea but still
Archetypes allow for some give-and-take variations, tweaking a class to a more specific flavor and/or mechanical aptitude.

This would involve no take, only give, but also only for those certain classes that- by my estimation -don't have anything to give in this regard, ie something to do outside of Fightan. You tack them on like an extra limb.
This is more written from the vantage point of PF 1 than PF 2, mind, which I've heard has something that sounds like 4e's ritual system. So that might be something.
I guess Starfinder's themes might be comparable?

Maybe? I never felt like there was enough mileage to get out of them but it's possible I was A) doing it wrong and B) not playing it long enough.
If the intent is just to gestalt them onto other classes it might be better to just go in class by class and add what those bare classes would in archetypes that don't actually take anything away short of a few modifications where appropriate.

Same effect, at the end of the day. Archetypes make them optional to the player, though.

Speaking of lore, sometimes it's the most simple of descriptions that imply a lot. Recently we were playing the fourth book of Reign of Winter, and invading the fortress of Dragon Lord Yrax. And one of the things I most distinctly remember, is that a some point we crossed a hallway full of statues, and the GM simply told us they were all statues of Yrax himself. Which, really, tells you everything you need to know about the guy.

How viable is a dwarf cavalier?
A bunch of Order abilities are Charisma-dependent, but if you don't focus on those then a dwarf is still viable. It helps that dwarf has a pretty good favored class bonus.

If a tree falls in the forest and nobody remembers it, who else will you have ice cream with?I'm playing in an Iron Gods campaign now where I'm finally trotting out my Barbarian of Joy idea... and it's so much fun. I even have fun making him a Religious Bruiser (because a guy who takes joy in battle seems like a natural follower of Gorum), and it's been hilarious watching how things go down (one of my favorite parts was my character trying to rally Scrapwall to help out at the climax of Part 2 of the module... and then watching the inevitable result as the character who sunk his charisma and naturally didn't put ranks in diplomacy tries to inspire people).
That said... having played an Unchained Barbarian for a bit, part of me wants to write an updated guide for discussing the adjustments that Unchained made to the class (that, and to pull catfolk out of the red for race recommendations - it just has too many feats that give useful stuff to be that low, even if the wisdom penalty hurts). I mean, I know the bulk of the player base has moved on to 2nd, and it'd mostly be an addendum for the stuff changed from vanilla barbarian, but still, it seems like it could use updating.

Spheres of Guile and Ultimate Engineering are being kickstarted for 1e.
Spheres of Guile is a Spheres of Power expansion for The Social Expert, with several social-fu classes using the Spheres engine.
Ultimate Engineering is a rebuild of the Tech sphere from Might.
So if you like the Spheres system, there's something to throw your Christmas money at.
Apropos of absolutely nothing, a Magical Trickster catfolk rogue using Pride Hunter to hide behind his allies and snipe with Sneak Attack-augmented ranged spells is a neat thing that can happen.
Might be attempting Starfinder soon at my new local game store. Made a couple of characters I could hopefully slot into an unknown party.
As a suggestion for kind of a baseline, look at Starfinder's Alien Archive 2, which has the Valka, and/or Pahtra (canine, feline, respectively) races.
